Is it possible to take an elegant picture of tuna? I think not. This Asian inspired tuna is a lunch I’ve really been into lately! It’s cheap, filling, tasty, and hits all my dietary needs!
For today’s lunch, I used two cans of tuna, but I need high protein at lunch to get me through til dinner time. If you don’t need as much, by all means use just one can! Just make sure you half the rest of the ingredients.
Even with the two cans of tuna and mix ins, this lunch still only cost me about $2. It will be even cheaper when tuna is on sale!
Today I ate this with some leftover celery sticks I had, and a couple tortilla chips. It would be delicious with about any type of cracker, or how about those fried wonton chips they have at the Chinese takeout?
Asian Inspired Tuna
Serves One to Two
- 2 cans of tuna, water packed
- 1 tablespoonful sesame oil
- 1 teaspoonful fresh grated ginger
- 1/2 teaspoonful minced garlic
- 1 teaspoonful salt
- A pinch of cilantro leaves, chopped
Drain tuna and flake with a fork into a bowl. Add other ingredients and mix. Best if it sits in the fridge for an hour or more.
Serve with veggie sticks, tortilla chips, crackers, or just eat it with a fork!
Subs:
- You don’t like tuna, or can’t eat fish? Use canned chicken or mashed chickpeas instead!
- Only have tuna packed in oil? That’s fine, just reduce the sesame oil a bit
- No fresh garlic or ginger? Use powders!
- No sesame oil? Try adding a bit of mayo and/or lime juice instead.
